  • 2 free-range whole eggs

Method

Bring a small saucepan of water to the boil, add the eggs and boil for 10 minutes, then drain and refresh in iced water. Peel the eggs and separate the whites and yolks. Finely chop the eggwhites and refrigerate until needed. (Set aside the yolks for another use.)
