Use a mandoline to slice the almonds widthways into small even shavings.
Bring the sugar and water to the boil in a small saucepan. Add the almonds and simmer for 5 minutes or until they are slightly translucent. Drain in a small metal sieve and discard the syrup.
Carefully arrange the shavings, one slice at a time, on a silicone baking mat on a dehydrator rack. Place in a food dehydrator* at 60°C (140°F) for 5 hours or until crisp.
