Using a very fine-blade Microplane*, finely grate the zest from the lemons (reserve the lemons for another use). There will be more than necessary but it is hard to work with a smaller amount. Place the zest in a food dehydrator* at 30°C (86°F) for 4 hours or until crisp. Grind into a powder in a spice grinder. Store in an airtight container until needed.
