  • 100 g ( oz) fromage frais
  • 10 g ( oz) Turkish apple tea powder (see Note)
  • 20 g (¾ oz) pure icing (confectioners’) sugar, sifted
  • 10 ml ( fl oz) apple brandy
  • pinch of table salt


Whisk the fromage frais until it begins to thicken. Add the apple tea powder and icing sugar and whisk until combined. Gently fold in the brandy and salt. The apple flavour should be very strong but not too sweet. Refrigerate for 1 hour.
