Ingredients

  • 16 young Jerusalem artichokes, gently scrubbed
  • 100 ml ( fl oz) olive oil table salt, to taste

Method

Preheat the oven to 120°C (235°F/Gas ½). Toss the artichokes with the oil and season with salt in a bowl. Place in a small heavy-based roasting tray and roast for 15 minutes or until golden.
