  • 2 kg (4 lb 8 oz) snow peas (mangetout)

Method

Slice the top third off each pea pod. Gently remove the peas from the pods without bruising them. Reserve the pea shells for the pea oil and ‘cooked’ peas. Store the shelled peas in an airtight container until needed.
