Place the quinoa in a fine sieve and thoroughly rinse under cold water. If not adequately washed, it will taste bitter when cooked due to the natural saponins in unprocessed quinoa (see Note). Place the quinoa in a bowl, cover with fresh water and soak for 10 minutes. Drain and rinse again. Bring a medium saucepan of salted water to the boil, then add the quinoa and simmer for 15 minutes or until tender. Drain well and spread in a thin layer on a tray to cool. Store in an airtight container until needed.
