Ingredients

  • 120 ml ( fl oz) freshly juiced, skimmed and strained honeydew melon juice
  • 10 ml ( fl oz) strained lime juice
  • 5 ml ( fl oz) white wine vinegar
  • table salt, to taste

Method

Pass the melon juice through muslin (cheesecloth) into a bowl. Add the lime juice, vinegar and a little salt. Refrigerate until needed.
