Ingredients

  • 8 raw (green) Crystal Bay prawns (shrimp), peeled and deveined
  • table salt, to taste
  • 1 lime

Method

Just before serving, lay the prawns on a small non-reactive tray and season with salt. Using a fine-blade Microplane*, grate the lime zest over each prawn until covered. Finish with a few drops of lime juice on each slice of prawn. Cover and leave for 5 minutes before serving.
