Ingredients

  • 100 ml ( fl oz) homemade buttermilk (you will need to make this 1 day ahead)
  • 1 small fresh wasabi root
  • table salt, to taste

Method

Pour the buttermilk into a small bowl and, using a fine-blade Microplane*, grate a tiny amount (about two passes on the grater) of wasabi into the buttermilk. Season with salt and whisk to combine. You should only just be able to taste the wasabi.
