  • 40 tiny lemon balm leaves
  • 8 pieces broccolini stem, peeled
  • few drops of extra virgin olive oil
  • table salt, to taste

Place the lobster portions in the centre of each bowl. Sprinkle with the ham salt and scatter over the lemon balm leaves. Dress the broccolini stem with the oil and table salt and place on top of the lobster. Pour the hot chicken–lemon balm broth around the lobster. Finish with a few drops of the lemon oil.
