Peel the mandarins and then, using a small turning knife, gently scrape and peel away all of the white membrane. Place the whole mandarins in a vacuum pouch. Whisk the water and honey together and pour into the pouch. Vacuum-pack on 100 per cent for 50 seconds in a chamber vacuum sealer*. Place in the refrigerator to macerate for 8 hours.
