Bull Kelp Salt

  • charcoal* and wood*, for burning
  • 500 g (1 lb 2 oz) fresh bull kelp
  • handmade sea salt, to taste


Light a fire with the charcoal and wood. Once the fire has died down, grill the kelp over the fire, about 20 cm (8 inches) above the heat, for 1–2 hours, turning every 10 minutes until it is crisp and perfumed by the smoke.

Grind the bull kelp into a powder between two stones that you’ve found on the beach. Season with the salt.
