  • 25 g (1 oz) organic hay
  • 500 ml (17 fl oz/2 cups) milk


Preheat the oven to 180°C (350°F/Gas 4) (non fan-forced). Place the hay in a roasting tray and place a wire rack on top to hold it down. Roast for 15 minutes or until golden brown.

Place the roasted hay in a saucepan with the milk and bring to a simmer over low heat. Remove from the heat and set aside to infuse for 15 minutes. Strain through muslin (cheesecloth) and set aside.
