  • 50 g ( oz) cultured butter (you will need to make this 1 day ahead), softened
  • 4 slices good-quality white bread (but not sourdough), toast thickness
  • 140 g (5 oz) piquant aged cheddar, thinly sliced


Spread the softened butter on one side of each piece of bread. Place 2 slices of bread, butter side down, on a tray lined with baking paper. Lay the cheese slices evenly on top and sandwich with the other 2 bread slices, butter side up.
