Ingredients

  • 125 g ( oz) water
  • 90 g ( oz) caster (superfine) sugar
  • 15 g (½ oz) native desert lime

Method

In a small saucepan, combine the water and sugar over medium heat, stirring until the sugar has dissolved, and bring to a simmer. Add the desert lime, bring back to a simmer, then remove from the heat. Pour into an airtight container and refrigerate for 24 hours.
