  1. 1.2 kg (2 lb 10 oz) organic unsweetened yoghurt

Method

Place the yoghurt in a sieve lined with muslin (cheesecloth) and hang over a small bucket in the refrigerator for about 12 hours or overnight to drain the whey. Save the yoghurt for another use.
