Lemon is the standard flavor for this type of pie, and it’s quite wonderful, but I like to surprise people with this variation. Oranges, however, lack the necessary tartness to make it on their own. The solution is to add lemon juice and cut back on the sugar. I make this when I get a batch of oranges that seem unusually sour.
I include a recipe here for making your own pie shell, but you can buy a prebaked one if you prefer.
