Gazpacho is so often the go-to option for a chilled summer soup that it’s easy to forget about other options. This one is an alternative which is fresh and full of textures. If you Lebanese cucumbers, do get them: they’re smaller and firmer than the larger cucumbers and, because they have so much less water, have a lot more taste.

This soup will keep for 2 days in the fridge. The almonds need to be fried and added just before serving.
