Arnold Rogow was a family friend of Ixta Belfrage, who tested a lot of the Ottolenghi SIMPLE recipes with Esme. Ixta has a habit of giving all the credit to others, including the inspiration behind this dish, but I’ve no doubt Arnold would have been calling this ‘Ixta’s roast chicken’. Make the stuffing and prep the chicken up to a day ahead, just keep in the fridge and bring to room temperature before roasting.
