Spiced apple cake

Name: Spiced apple cake
Yield: Serves ten
Ingredients: 150 g caster sugar; 3 large eggs, lightly whisked; 1 tsp vanilla extract; 300 g self-raising flour; 130 g unsalted butter, room temperature and cubed; 130 g demerara sugar; 1 tbsp mixed spice; ⅓ tsp salt; 200 g soured cream; 2 large Bramley apples, peeled, cored and cut into 1½cm wide wedges (460g); 1 Granny Smith apple, peeled, cored and cut into 1½cm wide wedges (125g)
