Chilli jam is always on hand at home and in the Restaurant because of its versatility and is a favourite with some as a simple spread on toast (mind you, a healthy chilli appetite and tolerance is needed to cope with this method of consumption). It can be simmered in coconut cream and used as a sauce for fish or chicken; it can be spooned over grilled meat, or used as part of a marinade. Use it as you would any other chilli sambal. Chilli jam keeps for 3 months, refrigerated.
