Curry has become a common element of everyday cooking in Australia. Long gone are the Anglo-Saxon bastardisations, where everything from canned pineapple, apple, sultanas and cream were added to the bland curry powders that were synonymous with the ‘exotic’ cooking of the fifties and sixties. Our shelves have been invaded with myriad choices and we are learning about the subtleties of curry flavours as well as developing an understanding of their complexities and origins.</
