This is a popular and convenient way of serving a curry at the table in an elegant manner. The fish curry is gently cooked in two clay or sand pots that are taken straight from the oven to the table. Clay pots in varying sizes can be found in Asian food stores at very reasonable prices. They need to be seasoned when new and should not be placed on a direct fame or heat. Cooking in a clay pot allows the natural juices of the food to be sealed in.
