These custards are an adaptation of the delicate Japanese chawan-mushi savoury custards that make a perfectly light start to a meal. Don’t expect the custards to set firm as the liquid dispelled from the ingredients during the cooking will give the custards a generous wobble and, when the surface is broken with eating, the custard will take on a soupy appearance, which is why they are served in the bowls in which they are steamed.
