This is food for the gods, an ethereal taste sensation created by a combination of flavours: the sweetness of the crab meat, the iodine saltiness of the caviar and the creaminess of the omelette and the horseradish cream. Make it with tender, loving care and your pains will be rewarded with heavenly applause and lip-smacking responses. The omelettes work best if made individually, so have on hand a couple of small 15 cm Teflon omelette or frying pans to cook two at a time.
