Chocolate Pastry

This is a fabulous pastry from one of Australia’s most celebrated chefs and culinary writers, Stephanie Alexander. It is like a chocolate shortbread, very moist with a fine crumb and used as a base for Chocolate Mocha Tart. It can also be used to hold other chocolate fillings, such as chocolate mousse or chocolate butter cream.
