This pastry provides an interesting alternative to the usual cheese plate. I sometimes include it on a set menu as a small taste between main course and dessert. It is also ideal as a follow-up to a light lunch. Other boutique cheeses being made in Australia that would be equally suitable include Milawa Chevre or Milawa Blue, or even Kervella’s Affine, a matured goat’s milk cheese. Of course, French roquefort or Italian gorgonzola will work
