This is a very manageable bread dough to work with, easy to roll out, not at all sticky, and so a good starting point. It is a wonderful bread to serve with cheese, particularly the more pungent varieties. A generous slice of quince paste completes the equation.

Ingredients

  • 500 g bread flour
  • 1 teaspoon sea salt

  1. Put the flour, salt and walnuts in the bowl of an electric mixer with a dough hook.
  2. Dissolve the yeast and sugar in the warm water and then pour it into the flour with the walnut oil. Knead with the dough hook on medium speed for 15 minutes until the dough becomes quite elastic in appearance and spongy to feel. The dough should not feel sticky; if it does, then to
