A bavarois is a flavoured custard base set lightly with gelatine and whipped cream and moulded before being turned out for serving. It gives the illusion of eating air, due to its ever-so-light texture, and takes on the intensity of the chosen flavouring. When making Honey Bavarois, choose a honey that has a flavour you like, but make sure it’s not too strong or sweet otherwise it will mask the flavours of its accompaniment.
