This is a fabulously refreshing ice-cream, the milk having been infused with the heady aroma of the leaves and flowers of lemon verbena. It is a must to make in summer when the plant becomes prolific. I also use the leaves as a base for tisane, a herbal tea that aids digestion. At the Restaurant we serve a slice of this ice-cream sandwiched between praline wafers – a play on the commercially produced Eskimo Pie. It is also wonderful served alongside the Lemon
