A sabayon is a light custard that is whisked over heat – not stirred – making it very light and frothy. It needs to be served as soon as it is made. Use good quality sauternes in the cooking, one that you can drink with the dessert when it is made. As with all good cooking, quality ingredients give the best result. This is not a recipe for using up cheap wine.
