Make this dessert when nectarines are at their prime during summer. Select large, juicy, unblemished fruit to use for the cooking. The Toffee Wafers are much like brandy snaps, only they are smoothed out after cooking to remove their bubbly texture. The result is a smooth, thin wafer that resembles a shard.
