Dried fruit is available all year round and by preparing it this way you have a ready-made fruit dessert during the winter months when many varieties of fruit are not in season. Choose fruit that has been recently dried; it will be soft and malleable and taste fresh. Fruit from Australia’s riverland is usually of the best quality. Serve this wonderful concoction warm, with clotted cream and toasted fruit bread.
