Cherries have a very short season around Christmas in Australia, but their shelf life can be extended by preserving them for later use whenever you have the desire to indulge in their taste.

Ingredients

  • 1 litre sugar syrup
  • 400 ml cherry liqueur or cherry brandy
  • 1

Method

  1. In a large, wide-based stockpot, bring the sugar syrup, liqueur, cinnamon and mace to a boil and simmer for 20 minutes.
  2. Add the cherries and simmer gently for 15 minutes, stirring occasionally. Spoon the cherries and their syrup into hot, sterilised jars and seal.
  3. Store refrigerated until ready to use.
