One of my favourite ways of serving brioche is to laden the dough with fruit for sweetness and built-in flavour. There’s nothing better than the seductive aroma and taste of fruit brioche served hot from the oven with cream or mascarpone.

  1. Prepare the brioche as directed. When it is ready to be kneaded, work 6 tablespoons of the cherries into the dough.
  2. Butter and sugar a large brioche mould and place the dough in it, adding a little ball of dough on top as in the classic presentation. Allow the dough to rise in the mould for 20 minutes, then bake in a
