Blood-Orange Cream and Meringue Tarts With Strawberries

Blood oranges have a very short season as they drop their fruit in one go, usually around the end of August, so have to be dealt with quickly. Sweeter and less acidic than the more usual oranges, they are not to be missed, so freeze the juice and think of a million ways of using it.
