Paramount Splice

This slice of ice-cream and sorbet captures the flavours of summer tropical fruit: I make a play on the commercial iceblock confection of the same name but give it a sophisticated flavour boost and presentation. The flavours and textures are sublime together, but if you don’t have the correct moulds or equipment to make it as I have, don’t despair! The flavours can be simply layered one upon the other in a rectangular plastic tub and set in the freezer - the taste will be the same. When mak
