These classic and elegant petits fours, a serious melt-in-the-mouth experience, are considered by many to be the ultimate confection. Made to resemble the exclusive fungi that are dug from the ground in France, they are essentially richly flavoured chocolate ganache rolled in a high-quality cocoa powder, and are best consumed soon after they are made. An alternative coating for the ganache centre is to roll the balls in melted chocolate.
