With their flecks of green from the courgette/zucchini and mint, these good-looking feta fritters make a summery light meal served with a simple tomato salad and warm flatbreads. The mint yogurt sauce makes a fresh, herby accompaniment, or the Sweet Chilli Onion Jam is another good option. A sprinkling of chopped unsalted pistachios adds a contrast of texture and a pleasant crunch, but isn’t essential.
