Don’t be turned off by the worthy-sounding title… mung beans make a surprisingly creamy humous. Plus a bag of beans is economical to buy and their relatively short cooking time (compared with other dried beans) means that you can have a bowl of freshly made humous and pitta crisps for dunking in well under an hour.
