Thai, or holy, basil is a fragrant combination of aniseed crossed with regular basil and is unmistakably Asian in flavour. It can be found in some large supermarkets or more usually Asian grocers and it’s really worth trying for its distinctive taste. What’s more, in Ayurvedic medicine holy basil is reputed to relieve stress and lift the spirit (hence its name). You could even serve this Thai-style omelette with an aromatic infusion of holy basil, lemongrass and ginger.
