This twist on the traditional British layered potato dish makes a comforting meal for a cold wintery evening. The layers of potato are interspersed with a mixture of leeks and kale and it comes with a savoury cheese custard made with mature Cheddar, although a classic blue cheese, such as Stilton, would also be delicious.


  • 2 tbsp butter
  • 2 tbsp olive oil
  • 4 leeks,


  • Heat half the butter and the olive oil in a large non-stick, ovenproof sauté pan and fry the leeks and kale for 5 minutes until tender, then remove from the pan. Arrange half the potatoes in the pan, overlapping them slightly to make an even layer. Spoon the leek and kale mixture on top. Arrange the remaining potatoes on top, again overlapping them to make an even layer.
