This vibrant dressing is just as good spooned over tomato, bean, grain or leafy green salads as it is over cooked rice or pasta. Mix together 4 tbsp extra virgin olive oil, 3 tbsp capers, drained and roughly chopped, 1 large handful of chopped mixed herbs, such as basil, oregano and thyme, 1 crushed small garlic clove and the juice of ½ lemon.
