Brush 2 fillet or sirloin steaks, about 250 g/9 oz each, with seasoned olive oil. Heat a griddle/grill or large, heavy-based frying pan over a high heat and sear the steaks for 2–3 minutes on each side, turning once or twice. Cover and leave to rest for 5 minutes before cutting into slices and serving in place of the hazelnuts.
