A fresh, peppery green salad is all you need with this caramelized shallot tarte tatin to make a delicious light meal. For a more substantial tatin, you could scatter a crumbled piquant blue cheese and toasted chopped hazelnuts over the top. Echalion, or banana shallots, are actually a cross between an onion and a shallot with an attractive elongated shape, and are conveniently easy to peel.
