Paneer, the Indian fresh mild cheese, has a dense, slightly crumbly texture and makes the perfect neutral base for these lightly spiced, crisp balls. You can find it sold in blocks in the chiller cabinet of large supermarkets and Asian grocers. The koftas can be served with the dosa and chutney or with basmati rice, or warm naan bread.
