If stuffed marrow sounds a bit ‘old-school’ vegetarian, ditch any pre-conceived ideas as this lifts the humble vegetable to new heights. For starters, the marrow is roasted separately from its filling until it starts to caramelize. This also means that there is little risk of the bulgur wheat, date and pistachio stuffing drying out. Secondly, it comes with a marrow baba ganoush made from the scooped out flesh, so nothing goes to waste.
