This is lasagne, but not as you know it as it really couldn’t be more different to the classic version. The ‘open’ lasagne makes the most of wonderful seasonal vegetables and is a great summery meal when you don’t want anything too heavy. The herb oil uses a combination of basil, chives and lemon thyme, but do try any fresh herbs that you have to hand – parsley, oregano and basil are good, too.
