Tangerine Creamsicle Sodas

Many people believe vanilla ice cream is a simple flavor to create, but it is actually the most difficult. Vanilla is straightforward and pure. There are no big chunks of chocolate, chopped nuts, or fruit purées to alter the flavor. Vanilla ice cream is ice cream unplugged. The only flavoring is the vanilla, so it is crucial to use the best beans or extract, such as Nielsen-Massey. Here’s an old, trusted combination of orange and cream in a new drinkable variation.

Ingredients

Rich Vanilla Ice Cream

  • 8 large egg yolks
  • 1 cup sugar
  • teaspoon kosher salt
  • 1 cup milk
  • 3 cups heavy (whipping) cream
  • 4 ounces (8 tablespoons) unsalted butter, cut into 8 pieces
  • 1 teaspoon vanilla extract

Tangerine Soda

  • cups cold freshly squeezed tangerine juice
  • teaspoon kosher salt
  • 2 teaspoons freshly squeezed lemon juice
  • 6 tablespoons sugar, or more as needed
  • 3 cups cold seltzer water

Method

To Make the Ice Cream

In a bowl, whisk together the egg yolks, ½ cup of the sugar, and the salt. Cook the milk, cream, and remaining ½ cup sugar in a heavy saucepan over medium heat, stirring occasionally, until almost simmering. Slowly pour the milk and cream into the egg mixture, whisking as you pour. Return the mixture to the saucepan. Cook over medium-low heat, stirring constantly with a heat-resistant plastic or wooden spatula, until the custard reaches 175°F and lightly coats the spatula. Remove from the heat and strain though a medium-mesh sieve into a clean bowl. Whisk in the butter.

Cool over an ice bath until room temperature. Stir in the vanilla extract. Refrigerate for 4 hours. Churn in an ice cream machine according to the manufacturer’s instructions. Freeze until scoopable, about 4 hours, depending on your freezer.

To Make the Soda

In a large pitcher, stir together the tangerine juice, salt, lemon juice, sugar, and seltzer water. Taste for sweetness and add more sugar if desired.

In Advance

The sodas should be prepared right before serving.

To Serve

Divide the soda among 6 tall glasses. Put 2 or 3 scoops of ice cream in each glass. Serve immediately, with straws and long spoons.
